Most of these sites are either blogs or portfolios or design firms. Which, IMHO, lend themselves to a “simple” or “minimalist” design. I’d like to see a ‘minimalist’ approach to a complex ecommerce site.

I agree with the consensus that this is not minimalism in the artistic sense. I don’t think these sites were built with the intention to be labeled art. From a design standpoint they are (about half) simplified to employ a minimalist perspective in my opinion. Many were still way too busy. Snog or Deconstruct are the two best examples of beautiful minimalist design. They tell a complete story in three seconds and give the eye only enough information/color to take in at one glance.
